Easy Tacos Minus the Shell

I love Mexican food and always have. My husband and I share that love and spent many date nights enjoying tacos. Every now and then, however, I like to mix it up and do something different with my tacos.
This week, I decided to do tacos minus the shell. I saw this awesome recipe on Facebook for a taco stuffed tomato, and since I love tomatoes I couldn't wait to try it! Here's what the end result looked like. Scroll down for the recipe I used.

To make this bowl of deliciousness, I first cooked some ground turkey meat in a skillet. When it was cooked, I added my own taco seasoning (Lemon pepper, black pepper, cumin, onion powder, garlic powder, chili powder, and paprika). The way I make this seasoning is to just eyeball everything until it looks right. Somehow it works every time, which is strange since I never measure anything. Once your taco meat is finished, take a large tomato and without cutting all the way through the bottom, cut it into wedges. Then gently spread the sides of the tomato to make a bowl. Spoon some of the taco meat into the tomato, then add your lettuce and cheese on top. I served mine with some tortilla chips and made queso on the side. I absolutely loved this recipe, and even though my husband didn't eat the tomato, he said that it was some of the best tacos he has had because the tomato keeps the meat moist. These were super easy to make and absolutely tasty. If you love tacos, give them a try.
